Many years ago, I was given a version of this recipe, which I have modified to meet my own tastes. I’ve also mashed up a couple of fresh anchovies when I couldn’t find the anchovy paste at the store. There is no egg yolk in this one, so no worries about poisoning guests with salmonella!
CAESAR SALAD DRESSING

Ingredients
- 1 Clove garlic
- 1 fresh lemon juice
- 1 t dry powdered English mustard
- Pinch cayenne pepper
- 1 tbsp Anchovy paste
- 3 tbsp olive oil
- Sea salt and freshly ground pepper to taste
- Romaine lettuce
- Parmesan cheese
Instructions
- Mince one clove garlic and “muddle” in bottom of wooden salad bowl with sea salt (or just throw in a bowl). Add lemon juice, mustard, cayenne pepper and anchovy paste; combine. Add olive oil and combine.
- Add romaine lettuce and toss with dressing, enough to coat. Shave parmesan cheese on top.
