Caesar Salad Dressing – Egg-free

Many years ago, I was given a version of this recipe, which I have modified to meet my own tastes. I’ve also mashed up a couple of fresh anchovies when I couldn’t find the anchovy paste at the store.  There is no egg yolk in this one, so no worries about poisoning guests with salmonella!

CAESAR SALAD DRESSING

Ingredients

  • 1 Clove garlic
  • 1 fresh lemon juice
  • 1 t dry powdered English mustard
  • Pinch cayenne pepper
  • 1 tbsp Anchovy paste
  • 3 tbsp olive oil
  • Sea salt and freshly ground pepper to taste
  • Romaine lettuce
  • Parmesan cheese

Instructions

  • Mince one clove garlic and “muddle” in bottom of wooden salad bowl with sea salt (or just throw in a bowl). Add lemon juice, mustard, cayenne pepper and anchovy paste; combine. Add olive oil and combine.
  • Add romaine lettuce and toss with dressing, enough to coat. Shave parmesan cheese on top.
