First things first - PLAY WITH YOUR FOOD! Your mother isn't looking over your shoulder; you're an adult; you know what you like!

The second "thing" is that I am from Lamoni, IA, so none of the "ethnic" foods are authentic except for the beef stew and the roasted chicken, possibly.

I encourage you to make changes to fit your particular tastes, substitute ingredients, and do whatever you want with these recipes. Share what you did that you liked so others (including me) can benefit.
