Cauliflower Spinach Side Dish

CAULIFLOWER SPINACH SIDE DISH

This dish is surprisingly flavorful.

Ingredients

  • 1 lb cauliflower florets
  • 1 sweet onion chopped
  • 1 small bulb fennel or 1 stalk celery, chopped
  • 1 red bell pepper deseeded and chopped
  • 1 garlic cloves crushed
  • 1 tablespoon grated lemon zest
  • 1 teaspoon sweet paprika
  • Olive oil spray
  • Sea salt and ground black pepper to taste
  • 2 or more cups of spinach torn in half
  • 1 cup water

Instructions

  • Add water to pan of Instant Pot.
  • Put vegetables, except spinach, in a bowl. Spray with olive oil and dust with lemon zest and paprika. Season with salt and pepper. Mix well. Put in steaming basket and then add to pan of Instant Pot. Close and secure lid.
  • Select the Manual setting cooking time for 3 minutes on High Pressure. When timer goes off, use quick pressure release. Carefully open the lid. Add spinach and cover with lid. (I have a glass lid that I use, otherwise lock pressure lid in place.)
  • Let mixture sit for 5 minutes (until spinach is wilted). Serve warm.
