Choppin’ Broccoli

I’m going to be brutally honest with you – I don’t like broccoli! I know, I know. Heresy of the first order for “someone” who is known for clean and healthy eating. Then one night my dear friend brought over a chopped broccoli salad as her contribution to our meal, and my world was rocked!! Well, gently reoriented at least. We ate the leftovers.

Next thing I know, I’m reading an article that says that you need to chop the broccoli for it to release some good stuff called sulforaphane. I’ll bite…I mean, literally, I’ll bite that!

“Sulforaphane is a compound within the isothiocyanate group of organosulfur compounds. It is produced when the enzyme myrosinase transforms glucoraphanin, a glucosinolate, into sulforaphane upon damage to the plant (such as from chewing or chopping during food preparation), which allows the two compounds to mix and react.”

Thanks for that Wikipedia! I choose to believe you. Lots of big science-y-sounding words.

Now for that recipe!

Chopped Broccoli salad

1 head of broccoli, florets only chopped

½ cup sunflower or pepita seeds

½ cup chopped sweet or red onion

2 strips bacon, cooked and crumbled

Lime-honey dressing (separate recipe), to taste or use a dressing of your choice

Chop the florets off the broccoli and chop them into small pieces. Let them sit for 30-90 minutes to release that famous sulforaphane. Optional added step – pour boiling water over florets and drain.

Chop onion. Mix in with broccoli.

Brown a couple of strips of bacon, let drain on paper towel, and crumble. Set aside

Prepare dressing and toss into broccoli mixture. Chill for a few hours (unless you’re in a hurry).

Before serving, add the seeds and bacon.
