I guess we usually eat these too fast to take pictures of them! I often do this as breakfast to eat in the car when we’re on the road.
Guacamole Deviled Eggs

Ingredients
- 6 hard boiled eggs
- 2 ripe avocados
- 1 Tbsp lime (or lemon) juice
- 1/2 teaspoon salt
- 1 Tbsp chopped cilantro plus a several leaves for garnish
- 1/2 jalapeno chile pepper seeded and minced
- 1 Tbsp chopped sweet onion or chives
Instructions
- Carefully peel the hard boiled eggs and cut them in half lengthwise. Place them on a serving platter. Scoop out the cooked yolks.
- Cut the avocados in half. Remove the pit. Scoop out the avocado flesh and place in a bowl. Roughly mash with a fork. Sprinkle with lime juice and salt to taste. Stir in the chopped jalapeño chile pepper, and chives. (Or just buy ready made guacamole)
- Scoop a generous spoonful of the avocado mixture into each well of the hard boiled egg whites. Top with fresh cilantro or chopped chives. Or a sprinkle of chile powder or paprika.
Notes
I find the best way to prepare hard boiled eggs is to steam them in a double boiler. Bring water to boil. Put eggs in top of the double boiler. Steam for 13 minutes. Immerse cooked eggs in ice water for about 10 minutes. They are usually pretty easy to peel. Crack them all over and start with the larger end to peel.
