This is my 2023-2024 New Year’s Eve menu. So delicious!!! I didn’t make a lot of food, but the beautiful flavors complemented each of the dishes.

Wild Rice with Paella Seasonings – I really like Lundberg’s Wild Blend Rice as the basis for this dish. The rice can be made entirely in the Instant Pot, cooked under high pressure for 15 minutes. Then, I put it in a casserole in the oven until the rest of the meal is ready. The rice gets a little firmer, and, although there’s no socarrat it has a nice, chewy texture.
