This is a very light version of shrimp scampi and quick to make. I sometimes use fish instead of shrimp. Spoiler alert – this is not “real” shrimp scampi! It’s how I make the dish!!!
Shrimp Scampi

Ingredients
- 1 pound large shrimp peeled
- 1 ½ teaspoons butter
- Olive oil
- 1 red bell pepper chopped
- 4 cloves garlic chopped
- 1 cup chicken broth
- 2 Roma tomatoes seeded and chopped
- 1/4 cup minced fresh parsley
- 1/4 cup fresh lemon juice
- 1/2 teaspoon salt
- ¼ teaspoon pepper
- ¼ teaspoon red pepper flakes
Instructions
- Remove tails from shrimp.
- Spray olive oil in medium skillet; melt butter over medium heat. Add bell pepper and garlic; sauté 2 minutes. Stir in chicken broth and bring to simmer. Stir in tomatoes, parsley, lemon juice, red pepper flakes. Add shrimp and cook until pink. Remove from heat and add salt & pepper.
Notes
Serve with spaghetti, or spaghetti squash if you prefer.
