Stuffed Delicata Squash

Ingredients
- 1 delicata squash halved lengthwise and seeded
- 2 teaspoons olive oil divided, or as needed
- 1 or 2 small apples, depending on size of squash cored and diced
- ¼ cup sweet onion diced
- 1 clove garlic minced
- ½ teaspoon fresh rosemary finely chopped
- 1 pinch ground cinnamon or to taste
- salt and ground black pepper to taste to taste
- 1 slice bacon cut into small pieces
- 2 tablespoons goat cheese I used Feta but a soft chevre would be good
Instructions
- Preheat oven to 400 degrees F (200 degrees C). Brush inside surface of delicata squash halves with about 1 teaspoon olive oil; place on a baking sheet. Bake in the preheated oven until tender when pierced with a fork, about 30 minutes.
- Place bacon pieces in a skillet and cook over medium-high heat, turning occasionally, until crisp, about 8 minutes. Remove bacon pieces and reserve to add back later. Drain oil from pan, leaving a small amount in pan for cooking.
- Add apples and onion to pan, stirring occasionally, until onion is translucent, about 5 minutes. Add garlic, rosemary, and cinnamon into apple mixture; Reduce heat to low; continue to cook, stirring occasionally, until apples are tender, about 5 minutes. Add back bacon and stir into apple-onion mixture. Remove from heat.
- Remove squash from oven when flesh is fork-tender and place on serving plate. Fill each side with half of apple-onion mixture.
- If using feta cheese, cut into small pieces or crumble if that is possible. Sprinkle cheese onto stuffed squash before serving. If using chevre, spoon one teaspoon onto each half before serving.
