Instructions
Slice the banana into a glass bowl and put in the microwave on high for one minute.
Add the vanilla and baking powder. Whip a little with a fork so ingredients are well blended.
Add the egg and stir into mixture.
Add the cocoa powder and stir well.
If your muffin pan will go in the microwave, add two tablespoons of the mixture to 6 muffin holders. These won't raise much, so you're not looking for that.
Place in microwave for two minutes.
Put three little muffins into each of 2 small dishes.
Add whatever topping you like. I often serve with SO Delicious dairy free coconut-based vanilla frozen dessert. I also often top with my chocolate syrup (and maybe a few chocolate chips because...why not.
Notes
If you're by yourself, put the whole mixture into a mug and microwave for two minutes!!!
