Corn Avocado & Cherry Tomato with Honey Lime Dressing
This is a very refreshing salad as a side dish for a BBQ.

Ingredients
1PintCherry Tomatoescut in half
4CobsCorncooked and cut off cob
1Avocadocut into pieces
1limejuice of one lime, squeezed
1tbspolive oil or avocado oil
1tsphoney
1tspsaltto taste
pepperfresh ground ,to taste
1clovegarlicfinely chopped or pressed
dashcayenne or chipoltle pepper
Instructions
Cook corn in boiling water for a few minutes, or grill on the BBQ, if you prefer. Let cool and cut off the cobs. Put in bowl.
Cut cherry tomatoes in half and put in bowl with corn.
Cut avocado in half, remove pit, and cut flesh into morsels by scoring while still in skin. Scoop out pieces with a spoon and put in bowl with corn and tomatoes.
Prepare salad dressing. Mix all ingredients together and pour over salad. Stir in to coat other ingredients and grind fresh pepper onto salad. Taste and add more salt or pepper, if needed.
