This is my version of Gremolata. Your Italian ancestor wouldn't necessarily recognize it, but we like it! Be sure to taste your parsley in the store before you buy it. Sometimes parsley can be bitter, and that just won't work!!

Ingredients
1/2cupminced fresh parsley
3clovesgarlicminced
2tablespoonsgrated lemon zest
1/4cupfreshly grated Parmesan cheese
2poundstrimmed fresh green beans
3tablespoonsolive oil
Salt and freshly ground pepper to taste
Instructions
In a small bowl, mix together the parsley, garlic, lemon zest and Parmesan. Set aside.
Bring a 6-quart pot with 3 quarts of salted water to boil. Add the string beans and cook until crisp-tender, 3 to 5 minutes. Drain thoroughly and transfer to a large bowl.
Toss the beans first with the olive oil to coat and then with the Gremolata mixture.
Season the beans to taste with salt and pepper and serve at once.
Notes
I like my green beans a little more done than some people. Cook a little longer if you agree.
