Leftover Oatmeal Pancakes

Ingredients

  • 1 cup cooked oatmeal
  • 1 large egg
  • ½ teaspoon vanilla
  • ½ teaspoon cinnamon
  • ¼ teaspoon kosher salt
  • ½ teaspoon baking soda
  • 1 tablespoon unsalted butter soft
  • 2 tablespoons warm maple syrup
  • ½ apple finely chopped

Instructions

  • Add all ingredients, except apple, in blender and blend until mostly smooth. Put mixture in bowl and mix in apple.
  • Heat large skillet or griddle. Lightly oil skillet. Pour ¼ cup batter onto hot skillet, making 1 pancake (I find the first one is always a mess). Remove and eat or throw away.
  • Pour rest of batter onto skillet. When bubbles form, pancake is ready to be flipped over. Cook until browned on the other side.
