Moroccan Spices for Salmon

Equipment

  • Spice grinder (I use coffee grinder)

Ingredients

  • 1 teaspoon fennel seeds
  • 1 star anise pod
  • 2 1/2 tablespoons ground cumin
  • 1/2 teaspoon ground red pepper
  • 1 teaspoon paprika
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon

Instructions

  • Put fennel seeds and star anise in grinder. Grind until they are finely ground. Transfer to small mixing bowl.
  • Add remaining ingredients to bowl and stir.
  • Put in small glass jar with shaker top and lid.
  • When ready to cook salmon (or other similar fish, such as Rainbow Trout), sprinkle liberally with spice mixture.
