STRAWBERRY RHUBARB COMPOTE

Ingredients

  • 4 cups strawberries chopped
  • 4 cups fresh rhubarb trimmed and chopped
  • Juice from 1 lemon
  • 1/4 cup water
  • 2 tbsp. raw honey or to taste
  • Pinch of sea salt

Instructions

  • Add all the ingredients to a saucepan, and sprinkle with a pinch of salt.
  • Place over medium heat, and bring to a light boil.
  • Simmer 25 to 35 minutes, or until you reach your desired thickness.
  • Mash everything and stir until smooth.
  • Place the sauce in clean jar, and refrigerate until ready to serve.
