Za’atar Manakeesh - totally inauthentic!!!

There are lots of "authentic" recipes for this dish. And if the internet serves me well, it's often considered a breakfast snack. In our house, it's for appetizers with drinks before dinner. And there is nothing authentic about it!!! (It does look like the real deal, though, doesn't it?)

Ingredients

  • 2 cup cauliflower rice
  • 3 eggs
  • 1 tsp dried thyme
  • 1 tsp salt
  • Za’atar seasoning

Instructions

  • Preheat oven to 350⁰F.
  • Cover baking pan with parchment paper.
  • Put cauliflower rice in bowl and mix in 3 eggs. Stir in thyme and salt.
  • Using 1/4 cup measure, put mound of mixture on parchment paper and smooth out to form thin circle of mixture. Repeat until you have 7-8 circles.
  • Place sheet in oven for 10 minutes. Remove and flip over cauliflower circles. Return pan to oven and bake for additional 10 minutes.
  • Remove from oven and flip circles over.
  • Brush tops with olive or avocado oil and sprinkle liberally with za'atar.
  • Cut in halves or quarters and serve.
