BANANA CHICKEN

Ingredients
- 12 CHICKEN THIGHS OR MIXTURE OF THIGHS AND WHITE MEAT
- 2 ONIONS CHOPPED
- 2 CLOVES GARLIC CHOPPED
- 1 CAN TOMATOES WITH JUICE
- 3 CARROTS SLICED THIN
- 1 TEASPOON HERBS DE PROVENCE SUBSTITUTE ½ OREGANO & ½ THYME
- ½ TEASPOON RED PEPPER FLAKES
- 1 CUP CHICKEN BROTH
- ½ CUP DRY WHITE WINE SUBSTITUTE APPLE JUICE
- 12 – 18 PITTED PRUNES CHOPPED
- 3 FIRM BANANAS PEALED AND SLICED
Instructions
- Heat oven to 350°f or use crock-pot.
- Braise chicken pieces in 1 tablespoon each butter & olive oil (or spray nonstick pan). Remove chicken from pan and sauté onion & garlic till clear
- Add carrots, tomatoes and seasonings. Replace chicken and stir in prunes.
- Put ingredients in casserole to go into oven or put in crock-pot.
- Cook one hour (or until chicken falls apart) in oven; add bananas and continue cooking for 15 minutes.
- Serve with rice or noodles.
