Banana Chicken

BANANA CHICKEN

Ingredients

  • 12 CHICKEN THIGHS OR MIXTURE OF THIGHS AND WHITE MEAT
  • 2 ONIONS CHOPPED
  • 2 CLOVES GARLIC CHOPPED
  • 1 CAN TOMATOES WITH JUICE
  • 3 CARROTS SLICED THIN
  • 1 TEASPOON HERBS DE PROVENCE SUBSTITUTE ½ OREGANO & ½ THYME
  • ½ TEASPOON RED PEPPER FLAKES
  • 1 CUP CHICKEN BROTH
  • ½ CUP DRY WHITE WINE SUBSTITUTE APPLE JUICE
  • 12 – 18 PITTED PRUNES CHOPPED
  • 3 FIRM BANANAS PEALED AND SLICED

Instructions

  • Heat oven to 350°f or use crock-pot.
  • Braise chicken pieces in 1 tablespoon each butter & olive oil (or spray nonstick pan). Remove chicken from pan and sauté onion & garlic till clear
  • Add carrots, tomatoes and seasonings. Replace chicken and stir in prunes.
  • Put ingredients in casserole to go into oven or put in crock-pot.
  • Cook one hour (or until chicken falls apart) in oven; add bananas and continue cooking for 15 minutes.
  • Serve with rice or noodles.
