Banana Chocolate Muffins

There are lots of complicated recipes out there, but you don’t need to do all that to make a delicious dessert with a few ingredients. Add some kind of topping, like nondairy coconut dessert and chocolate syrup, and you have an easy and delicious dessert.

Banana Chocolate Muffins

Quick and easy!
Servings 2 people

Ingredients

  • 1 Banana more on the ripe side is better
  • 1/4 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1 egg
  • 2 teaspoons cocoa powder the best quality you can find

Instructions

  • Slice the banana into a glass bowl and put in the microwave on high for one minute.
  • Add the vanilla and baking powder. Whip a little with a fork so ingredients are well blended.
  • Add the egg and stir into mixture.
  • Add the cocoa powder and stir well.
  • If your muffin pan will go in the microwave, add two tablespoons of the mixture to 6 muffin holders. These won't raise much, so you're not looking for that.
  • Place in microwave for two minutes.
  • Put three little muffins into each of 2 small dishes.
  • Add whatever topping you like. I often serve with SO Delicious dairy free coconut-based vanilla frozen dessert. I also often top with my chocolate syrup (and maybe a few chocolate chips because...why not.

Notes

If you're by yourself, put the whole mixture into a mug and microwave for two minutes!!!
