Corn, Avocado, and Tomato Salad

This salad is delicious! The dressing can be used on any kind of salad.

Corn Avocado & Cherry Tomato with Honey Lime Dressing

This is a very refreshing salad as a side dish for a BBQ.

Ingredients

  • 1 Pint Cherry Tomatoes cut in half
  • 4 Cobs Corn cooked and cut off cob
  • 1 Avocado cut into pieces
  • 1 lime juice of one lime, squeezed
  • 1 tbsp olive oil or avocado oil
  • 1 tsp honey
  • 1 tsp salt to taste
  • pepper fresh ground ,to taste
  • 1 clove garlic finely chopped or pressed
  • dash cayenne or chipoltle pepper

Instructions

  • Cook corn in boiling water for a few minutes, or grill on the BBQ, if you prefer. Let cool and cut off the cobs. Put in bowl.
  • Cut cherry tomatoes in half and put in bowl with corn.
  • Cut avocado in half, remove pit, and cut flesh into morsels by scoring while still in skin. Scoop out pieces with a spoon and put in bowl with corn and tomatoes.
  • Prepare salad dressing. Mix all ingredients together and pour over salad. Stir in to coat other ingredients and grind fresh pepper onto salad. Taste and add more salt or pepper, if needed.
