Granola

I like to make my own granola! It has less ingredients than many. I usually don’t add dried fruit because I like to eat it with fresh fruit and vegan yogurt. If you want to add, I’ve seen recipes where the dried fruit can be added during the last 20 minutes of baking.

Granola

Servings 0

Ingredients

  • 3 ¾ cups rolled oats
  • ½ to ¾ cup slivered almonds or your choice of nuts, chopped
  • 2 teaspoons ground cinnamon or chai spice
  • ¼ teaspoon salt
  • 2-3 tablespoons maple sugar
  • 3 large eggs, whites only or 1/3 cup of egg whites from carton
  • 1 teaspoon vanilla extract
  • ¼ cup dried unsweetened coconut Optional, I don't use it.

Instructions

  • Preheat oven to 225°F. Line a baking sheet with parchment paper.
  • Combine oats, almonds, coconut, cinnamon, and salt in a large bowl. (Coconut is optional)
  • Beat egg whites in a glass, metal, or ceramic bowl until stiff peaks form. Beat in vanilla extract. Fold sugar into egg whites. Fold egg whites into the oat mixture. Spread on the prepared baking sheet.
  • Bake in the preheated oven, stirring every 20 minutes, until granola is crispy, about 1 hour.
  • Let cool on counter. When cool, put in airtight container (I use a glass mason jar).
