This is a great way to use up oatmeal.
Leftover Oatmeal Pancakes

Ingredients
- 1 cup cooked oatmeal
- 1 large egg
- ½ teaspoon vanilla
- ½ teaspoon cinnamon
- ¼ teaspoon kosher salt
- ½ teaspoon baking soda
- 1 tablespoon unsalted butter soft
- 2 tablespoons warm maple syrup
- ½ apple finely chopped
Instructions
- Add all ingredients, except apple, in blender and blend until mostly smooth. Put mixture in bowl and mix in apple.
- Heat large skillet or griddle. Lightly oil skillet. Pour ¼ cup batter onto hot skillet, making 1 pancake (I find the first one is always a mess). Remove and eat or throw away.
- Pour rest of batter onto skillet. When bubbles form, pancake is ready to be flipped over. Cook until browned on the other side.
