Moroccan Spices for Salmon

- Spice grinder (I use coffee grinder)
Ingredients
- 1 teaspoon fennel seeds
- 1 star anise pod
- 2 1/2 tablespoons ground cumin
- 1/2 teaspoon ground red pepper
- 1 teaspoon paprika
- 1 teaspoon ground cardamom
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
Instructions
- Put fennel seeds and star anise in grinder. Grind until they are finely ground. Transfer to small mixing bowl.
- Add remaining ingredients to bowl and stir.
- Put in small glass jar with shaker top and lid.
- When ready to cook salmon (or other similar fish, such as Rainbow Trout), sprinkle liberally with spice mixture.
