Table for One

By Deborah

Eggplant with Sausage and Mozzarella

I frequently am asked how I adjusted to cooking for one person instead of two or even a whole household. It has been an adjustment, especially in terms of buying so as to avoid as much waste as possible! Over the months, I have come up with some meals that I make regularly. Featured prominently are chicken and salmon. And recipes that can be frozen so I can eat them multiple times but not on subsequent days. I will be expanding this section and modifying because I learn something new every day!

My most recent innovation has been to buy a smallish eggplant that will provide 8 evenly sliced pieces. I grill them in my little George Foreman grill (but this can be done by broiling for a couple of minutes on each side in the oven). Then I squeeze the meat out of a Whole Foods chicken sausage and cook it in a skillet. I added two pucks of my tomato jam to that. I put one layer of eggplant in a small baking pan and add the meat. I sprinkle with a little parmesan cheese before putting the final layer of eggplant slices, covered with mozzarella cheese (I like those cute little bite sized balls, but shredded or even sliced will work fine). I pop it into a 400 F oven for about 30 minutes (everything is already cooked, so you’re just looking at the cheese). This provides me with a good-sized dinner portion plus enough for a light lunch. Add a salad or some other green vegetable and you have a delicious meal for one!!!
