I kept seeing a picture of something that looked like a pizza, but called za’ater man’ouche and wanted to try it. So, we bought one and took it home to have with drinks. Unfortunately, the base was dry and tasted like cardboard. However, the idea of adding za’atar to a “pizza” was very appealing. And I thought I would try it on my cauliflower “bites”. This is the result!
This recipe starts with raw cauliflower rice rather than pre-cooking it before making the bites. There’s a little more texture, but it’s quite delicious.
Za’atar Manakeesh - totally inauthentic!!!
There are lots of "authentic" recipes for this dish. And if the internet serves me well, it's often considered a breakfast snack. In our house, it's for appetizers with drinks before dinner. And there is nothing authentic about it!!! (It does look like the real deal, though, doesn't it?)

Ingredients
- 2 cup cauliflower rice
- 3 eggs
- 1 tsp dried thyme
- 1 tsp salt
- Za’atar seasoning
Instructions
- Preheat oven to 350⁰F.
- Cover baking pan with parchment paper.
- Put cauliflower rice in bowl and mix in 3 eggs. Stir in thyme and salt.
- Using 1/4 cup measure, put mound of mixture on parchment paper and smooth out to form thin circle of mixture. Repeat until you have 7-8 circles.
- Place sheet in oven for 10 minutes. Remove and flip over cauliflower circles. Return pan to oven and bake for additional 10 minutes.
- Remove from oven and flip circles over.
- Brush tops with olive or avocado oil and sprinkle liberally with za'atar.
- Cut in halves or quarters and serve.
